👨French Onion Soup #oui
👉2 tablespoons olive oil
👉6 large Yellow onions, sliced
👉dash of sugar
👉3 cloves garlic, minced
👉1 tablespoon fresh thyme OR 1 teaspoon dried
👉1/2 cup dry white wine
👉6 cups low sodium beef broth
👉1 tablespoon Dijon mustard
👉Salt + Pepper, to taste
👉Slices of bread of choice
👉1/4 cup shredded cheese of choice, per bowl (I used shredded Munster)
👨Place olive oil and onions in a pot over medium-low flame, add a dash of sugar and a dash of salt and mix – allow the onions to sautee about 30-40 minutes, mixing every now and then…..the onions should turn a deep brown caramel color
👨Add the garlic, thyme and Dijon mustard and mix well, about 1 minute
👨Add the white wine to the pot and mix, scraping up the bits stuck to the bottom of the pot – allow this to simmer uncovered about 6 minutes (this allows the alcohol in the wine to evaporate)
👨Add the broth and salt and pepper and bring to a boil, cover and reduce to simmer 15 minutes more.
👨Ladle the soup into an oven-safe bowl and place a slice of bread on the top. Sprinkle the shredded cheese on top of the bread. Place this under the broiler, until the cheese and bread are roasted and are a golden brown color.
