Kale Casserole

๐Ÿ€๐Ÿ€Kale Casserole๐Ÿ€๐Ÿ€
In a large bowl combine:

๐Ÿ‘1/2 bag pre-washed kale, roughly chopped (Many supermarket sell it! Baby kale would be great as well!)

๐Ÿ‘1 whole egg, 4 egg whites

๐Ÿ‘1 large onion, thinly sliced

๐Ÿ‘8oz Cremini mushrooms, sliced

๐Ÿ‘1 tablespoon tomato paste

๐Ÿ‘2 cloves garlic, minced

๐Ÿ‘Salt, to taste

๐Ÿ‘Chili Flakes (optional)

1. Mix well by hand, massaging the kale so it softens slightly
2. Pour into a baking dish sprayed with Pam
3. Top with slices of tomato and black pepper
4. Cover and bake in a preheated 400 degree oven about 20 minutes
5. Uncover for another 10 minutes until all liquids evaporate

Serve and enjoy!!
